Ingredients

  • 1 clove garlic, minced
  • 8 to 10 large ripe tomatoes, peeled
  • 4 cucumbers, peeled and chopped
  • 1 large onion, minced
  • 2 large green peppers, finely chopped
  • 1 (46 oz.) can V-8 or tomato juice
  • 1/4 c. wine vinegar
  • 3 Tbsp. olive oil
  • 1 Tbsp. salt
  • 1 tsp. pepper

Instructions

  1. Combine all
  2. ingredients in a large container and chill at least 2 hours.
  3. Serves 20 (1/2 cup) servings.
