Ingredients

  • 2 cans creamed corn
  • 2 cups Minute rice
  • 1 small jar pimento
  • 2 eggs
  • 1 small onion
  • 1/2 cup green pepper
  • 1 stick butter
  • 1 cup cheese

Instructions

  1. Chop the small onion and green pepper; cook in butter until tender.
  2. Mix the cooked vegetables with creamed corn, Minute rice, beaten eggs, pimento, and half of the cheese.
  3. Pour the mixture into a greased baking dish and bake at 325°F for 40 minutes.
  4. Sprinkle the remaining cheese on top and bake for an additional 5 minutes until melted.
