Ingredients

  • 1 cup sifted flour
  • 3/4 cup yellow corn meal
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 egg
  • 1 cup skim milk
  • 1/4 cup oil

Instructions

  1. Preheat oven to 425°F.
  2. Sift together the flour, corn meal, salt, baking powder, and sugar.
  3. Add the egg, milk, and oil; stir quickly and lightly until combined.
  4. Do not beat the batter.
  5. Pour batter into muffin tins or an 8 x 8-inch pan.
  6. Bake for 20 to 30 minutes, or until golden brown.
