Ingredients

  • 18.5 oz. yellow cake mix with pudding
  • 1/2 cup firmly packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 cup finely shredded carrots
  • 1/2 cup raisins
  • 1/2 cup chopped pecans

Instructions

  1. Combine the yellow cake mix, brown sugar, ground cinnamon, water, vegetable oil, and eggs. Beat for 2 minutes at medium speed with an electric mixer.
  2. Fold in the shredded carrots, raisins, and chopped pecans.
  3. Spoon the batter into a greased and floured 10-inch tube pan.
  4. Bake at 350°F (175°C) for 55 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow the cake to cool, then top with cream cheese glaze.
