Ingredients

  • 1 Tbsp butter
  • 2 Tbsp chopped onion
  • 1 can creamed corn
  • 1 box frozen chopped broccoli, thawed
  • 1/3 cup crushed soda cracker crumbs
  • 1/2 cup milk
  • 1 egg, beaten
  • 1/4 tsp salt
  • 2 dashes pepper

Instructions

  1. Saute butter and chopped onion in a skillet until onions are translucent.
  2. In a mixing bowl, combine creamed corn, thawed chopped broccoli, crushed soda cracker crumbs, milk, beaten egg, salt, and pepper.
  3. Pour the mixture into a microwave-safe dish.
  4. Cook in microwave at high for 8 minutes, then stir.
  5. Continue cooking until the mixture is set, about 7 to 10 minutes.
