Ingredients

  • 5 cups bread flour
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1 cup cornmeal
  • 2 packets yeast
  • 1.5 cups water
  • 0.5 cups milk
  • 2 tablespoons shortening
  • 4 teaspoons melted butter

Instructions

  1. In a large mixing bowl, blend 2 cups of flour, sugar, salt, cornmeal, and yeast.
  2. Combine water, milk, and shortening, then heat to lukewarm.
  3. Pour the warm liquid into the dry ingredients and blend well.
  4. Continue adding flour until the dough is moderately stiff.
  5. Turn the dough onto a floured surface and knead until smooth and elastic, about 8 minutes.
  6. Place the dough in a greased bowl and let it rise until doubled in size.
  7. Punch down the dough.
  8. Divide the dough into 32 small pieces, dividing successively with a knife into 2, 4, 8, 16, and 32 pieces.
  9. Roll each piece into a ball.
  10. Place half of the balls in the bottom of a well-greased tube cake pan.
  11. Brush these with half of the melted butter.
  12. Place the remaining balls on top of the first layer.
  13. Brush with the remaining melted butter.
  14. Let the assembled bread rise until doubled in size.
  15. Bake at 375°F for 55 to 60 minutes.
  16. Turn out of the pan and tap the bottom crust; if it sounds hollow, the bread is done.
  17. If not, return to oven for a few more minutes, then cool on a rack.
