Ingredients

  • 4 Tbsp butter
  • 1 onion, diced
  • 4 Tbsp bacon chips
  • 2 (No. 303) cans cream-style corn
  • 3 cups cooked, cubed potatoes
  • 3 cups milk
  • 1 1/2 cups cubed yellow cheese

Instructions

  1. Melt butter in a large pot and lightly brown the diced onion and bacon chips.
  2. Add the cream-style corn and heat thoroughly.
  3. Pour in the milk and add the cooked, cubed potatoes.
  4. Season as desired and stir in the cubed yellow cheese.
  5. Heat until the cheese is stringy and melted.
  6. Serve hot, optionally with buttermilk biscuits.
