Ingredients

  • 2 c. sifted flour
  • 5 tsp. baking powder
  • 2 tsp. salt
  • 3 Tbsp. sugar
  • 2 eggs
  • 2 c. milk
  • 6 Tbsp. melted shortening or oil
  • 1 c. canned cream-style corn

Instructions

  1. Sift together flour, baking powder, salt, and sugar.
  2. Beat eggs, then add milk and melted shortening or oil, and mix well.
  3. Add the wet ingredients to the dry ingredients and stir until well blended.
  4. Heat a griddle, heavy frying pan, or electric skillet slowly until moderately hot.
  5. Lightly grease before cooking each batch.
  6. Pour about 1/4 cup of batter for each cake onto the hot surface.
  7. Cook until the top is full of bubbles that begin to break and the edges are dry.
  8. Turn and brown the other side.
  9. Repeat with remaining batter.
  10. Serve hot with butter, syrup, or toppings of choice.
