Ingredients

  • 2 c. sugar
  • 2 c. pumpkin
  • 4 eggs
  • 1 c. cooking oil
  • 2 c. flour
  • 1 tsp. baking soda
  • 2 1/2 tsp. pumpkin spice
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • powdered sugar

Instructions

  1. Mix sugar, pumpkin, eggs, and oil in a large mixing bowl.
  2. Combine flour, baking soda, spices, baking powder, and salt in a separate bowl.
  3. Add the dry ingredients to the pumpkin mixture and mix well.
  4. Pour the batter into an 11 1/4 x 17 1/4 x 3-inch cookie sheet.
  5. Bake at 350°F for 25 minutes.
  6. Allow to cool, then cut into squares.
  7. Sprinkle with powdered sugar before serving.
