Ingredients

  • 1 package frozen whole kernel corn
  • 1 package large lima beans
  • 2 cups white sauce
  • 1/2 cup grated sharp Cheddar cheese
  • 3 small green onions
  • 1 small can pimento

Instructions

  1. Cook the frozen corn and lima beans as directed on their packages; drain.
  2. Prepare 2 cups of white sauce.
  3. Add grated sharp Cheddar cheese to the white sauce and stir until melted.
  4. Chop the green onions, including the tops.
  5. Drain and chop the small can of pimento.
  6. Mix the cooked corn, lima beans, green onions, pimento, and cheese sauce together.
  7. Pour the mixture into a buttered casserole dish.
  8. Cover the casserole with croutons made from dry toast cut into small squares and browned in a small amount of oleo.
  9. Bake for about 1 hour at 350°F (175°C) or until thoroughly heated.
  10. Can be made ahead and refrigerated until reheating.
