Ingredients

  • 4 cups fresh cut-up corn
  • 1/4 cup cooking oil
  • 1 cup cut-up onions
  • 1/2 cup cut-up peppers
  • 2 large tomatoes or 1 can Ro-Tel tomatoes
  • salt

Instructions

  1. Put oil, corn, onions, and peppers in a large iron pot and brown until sticky on the bottom of the pot.
  2. Add tomatoes, stirring and adding a small amount of water to prevent sticking.
  3. Cook for 45 minutes to 1 hour, stirring often.
