Ingredients

  • 3 oz oatmeal
  • 1 cup flour
  • 1/4 cup brown twin sugar
  • 1/2 teaspoon baking powder
  • 6 tablespoons plus 2 teaspoons diet margarine
  • 5 teaspoons honey
  • 10 teaspoons coconut
  • 16 dried apricot halves, chopped
  • 6 dates, chopped
  • 6 tablespoons raisins
  • 1/2 cup water
  • 5 teaspoons sunflower seeds

Instructions

  1. Combine oatmeal, flour, brown sugar, baking powder, margarine, honey, and coconut in a bowl.
  2. Mix well and set aside.
  3. Cook apricots, dates, raisins, and water in a small saucepan until the water is absorbed.
  4. Spread half of the oatmeal mixture evenly in a 9 x 9 inch dish.
  5. Spread the cooked fruit mixture on top of the oatmeal layer.
  6. Combine the remaining oatmeal mixture with sunflower seeds.
  7. Sprinkle the remaining oatmeal mixture over the fruit layer and press lightly.
