Ingredients

  • 2 (10 oz.) cans condensed oyster stew
  • 1 (1 lb.) can creamed corn
  • 1 (1 lb.) can whole corn
  • 1 egg
  • 1 1/4 cups cracker crumbs
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons pimento strips

Instructions

  1. Combine condensed oyster stew, creamed corn, whole corn, beaten egg, 1 1/4 cups cracker crumbs, salt, pepper, and pimento strips in a bowl.
  2. Pour the mixture into a greased 2-quart casserole dish.
  3. Combine margarine and 1/2 cup cracker crumbs; sprinkle around the edge of the corn mixture.
  4. Bake at 350°F for 1 hour, until a knife inserted halfway comes out clean.
