A vibrant, sweet and tangy corn and pea salad with bell peppers and pimentos, perfect as a refreshing side dish for picnics and family gatherings.

Ingredients

  • 1/4 cup oil
  • 1/3 cup sugar
  • 1/4 cup white vinegar
  • 1/4 teaspoon salt
  • 1 can shoepeg corn
  • 1 can English peas
  • 1 4-ounce jar pimento
  • 1 large bell pepper, finely chopped
  • 1 medium Vidalia onion, chopped

Instructions

  1. Mix oil, vinegar, and sugar together in a saucepan.
  2. Bring this mixture to a boil over medium heat.
  3. Remove from heat and let it cool for about five minutes.
  4. Pour the cooled dressing over the corn, peas, pimento, bell pepper, and onion mixture.
  5. Stir well to combine and refrigerate until the salad is chilled.
  6. Serve and enjoy!
