Ingredients

  • 2 eggs, lightly beaten
  • 1 c. freshly scraped corn kernels
  • 1/3 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/4 tsp. paprika
  • freshly ground black pepper

Instructions

  1. Combine eggs and corn in a bowl.
  2. Sift together flour, baking powder, salt, paprika, and black pepper.
  3. Fold the dry mixture into the corn and egg mixture.
  4. Drop spoonfuls of the batter into hot fat heated to 365°F (185°C).
  5. Cook until golden brown.
  6. Drain on paper towels and serve hot.
