Ingredients

  • 1 cup brown sugar, packed
  • 1 cup vegetable oil
  • 2 eggs
  • 2 cups quick cooking or regular oats
  • 1 1/2 cups flour
  • 1 cup raisins or cut up dates
  • 1 cup chopped nuts or flaked coconut
  • 1 1/2 teaspoons ground cloves
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 15 1/2 x 10 1/2 x 1-inch jelly roll pan.
  2. Mix brown sugar, vegetable oil, and eggs in a large bowl with a spoon until smooth.
  3. Stir in the oats, flour, raisins or dates, chopped nuts or coconut, ground cloves, cinnamon, baking soda, and salt until well combined.
  4. Spread the mixture evenly in the prepared pan with a spatula, patting it down with your hand.
  5. Bake until the center is set but not firm, about 17 to 22 minutes, then cool for 15 minutes.
  6. Drizzle evenly with Honey Glaze.
  7. Cut into bars and store tightly covered for up to 2 weeks or freeze for up to 6 months.
