Soft Granola Bars
Soft, chewy granola bars with warm spices, nuts, and dried fruit, perfect for a quick snack or breakfast on the go, with a sweet honey glaze topping.

- Preheat oven to 350°F (175°C). Grease a 15 1/2 x 10 1/2 x 1-inch jelly roll pan.
- Mix brown sugar, vegetable oil, and eggs in a large bowl with a spoon until smooth.
- Stir in the oats, flour, raisins or dates, chopped nuts or coconut, ground cloves, cinnamon, baking soda, and salt until well combined.
- Spread the mixture evenly in the prepared pan with a spatula, patting it down with your hand.
- Bake until the center is set but not firm, about 17 to 22 minutes, then cool for 15 minutes.
- Drizzle evenly with Honey Glaze.
- Cut into bars and store tightly covered for up to 2 weeks or freeze for up to 6 months.
