Ingredients

  • 16 oz. can whole corn, drained
  • 1 small onion, chopped
  • 3 to 4 grated carrots
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 green pepper, chopped
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • salt and pepper to taste

Instructions

  1. Combine drained corn, chopped onion, chopped green pepper, and grated carrots in a large bowl.
  2. In a separate bowl, mix together sour cream, mayonnaise, vinegar, sugar, salt, and pepper to make the dressing.
  3. Pour the dressing over the vegetable mixture and toss to coat evenly.
  4. Refrigerate for at least 2 hours before serving to let flavors meld.
