Ingredients

  • 2 eggs
  • 1 stick melted margarine
  • 1 (8 1/2 oz.) can creamed corn
  • 1 (8 1/2 oz.) can whole kernel corn
  • 1 box Jiffy corn muffin mix
  • 1 cup sour cream

Instructions

  1. Beat the eggs in a mixing bowl.
  2. Add all the remaining ingredients: melted margarine, creamed corn, whole kernel corn, corn muffin mix, and sour cream.
  3. Mix thoroughly until well combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake uncovered at 375°F for 30 to 35 minutes, or until the pudding is firm and nicely browned.
