Ingredients

  • 3 eggs, separated
  • 1 1/4 cups milk, scalded
  • 3/4 cup corn meal
  • 3/4 teaspoon baking powder
  • 2 tablespoons margarine
  • 1 (17 oz.) can cream-style corn
  • 3/4 teaspoon salt

Instructions

  1. Grease a 2-quart baking dish.
  2. Beat egg whites until stiff.
  3. Beat yolks until thick.
  4. Stir corn meal and salt into milk, beating hard.
  5. Cook a few seconds until the mixture reaches the consistency of thick mush;
  6. Blend in margarine, cream-style corn, baking powder, and egg yolks.
  7. Fold in the beaten egg whites.
  8. Pour the mixture into the prepared baking dish.
  9. Bake at 350°F for about 35 minutes or until puffy and golden brown; a knife inserted in the middle should come out clean.
