Ingredients

  • 1 quart fresh spinach, chopped
  • 1/2 cup onion, chopped
  • 8 oz cream cheese
  • 3/4 cup low-fat ricotta cheese
  • 1/2 teaspoon basil leaves, crushed
  • 1/2 teaspoon oregano leaves, crushed
  • 1/4 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 3/4 cup tomato, chopped
  • 2 tablespoons Parmesan cheese, grated

Instructions

  1. Preheat oven to 350°F.
  2. Place chopped spinach and onion in a small saucepan with a small amount of water.
  3. Cover and cook for 5 minutes or until tender; drain well.
  4. In a small mixing bowl, beat the cream cheese, ricotta cheese, basil, oregano, salt, garlic powder, and pepper at medium speed until well blended.
  5. Stir in the spinach mixture and spread into a 9-inch pie plate.
  6. Bake for 15 to 20 minutes or until thoroughly heated.
  7. Top with chopped tomato and grated Parmesan cheese.
  8. Serve with crisp rye crackers or bagel chips.
