Ingredients

  • 1/2 cup yellow cornmeal
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 large egg
  • 1/2 cup canned evaporated milk
  • 2 tablespoons vegetable oil
  • dehydrated minced onions (optional)

Instructions

  1. Combine the yellow cornmeal, flour, baking powder, salt, and sugar in a medium bowl.
  2. Add the beaten egg, canned evaporated milk, and vegetable oil to the dry ingredients.
  3. Stir until the batter is smooth.
  4. If desired, stir in dehydrated minced onions.
  5. Coat a stick pan with cooking spray (Pam).
  6. Heat the pan in the oven at 425°F until hot.
  7. Remove the pan from the oven and spoon in batter, filling each section about 2/3 full.
  8. Return the pan to the oven and bake at 425°F for 10 to 12 minutes, until lightly browned.
  9. Remove from oven, let cool slightly, and serve.
