- Combine the yellow cornmeal, flour, baking powder, salt, and sugar in a medium bowl.
- Add the beaten egg, canned evaporated milk, and vegetable oil to the dry ingredients.
- Stir until the batter is smooth.
- If desired, stir in dehydrated minced onions.
- Coat a stick pan with cooking spray (Pam).
- Heat the pan in the oven at 425°F until hot.
- Remove the pan from the oven and spoon in batter, filling each section about 2/3 full.
- Return the pan to the oven and bake at 425°F for 10 to 12 minutes, until lightly browned.
- Remove from oven, let cool slightly, and serve.
