Ingredients

  • 1 1/2 cups self-rising meal
  • 1 1/2 cups self-rising flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons rubbed sage
  • 1 teaspoon pepper
  • 1 large onion, chopped
  • 2 eggs
  • 2 cups buttermilk
  • 1/4 cup bacon grease

Instructions

  1. Mix all ingredients, except bacon grease.
  2. Stir well to combine.
  3. Heat bacon grease in a large iron skillet or a 9 x 13-inch heavy pan until very hot.
  4. Pour the batter into the hot skillet or pan.
  5. Bake in a 450°F oven for 20 to 25 minutes or until well browned.
