Ingredients

  • 1 pan baked cornbread
  • 1 onion, diced
  • 1 (16 oz.) can corn, drained
  • 1 (16 oz.) can stewed tomatoes, chopped
  • 1 (16 oz.) can LeSueur peas, drained
  • 1 to 2 lb. ham, cut into 1-inch squares
  • 6 large peppers, parboiled
  • 6 strips bacon

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Crumble the baked cornbread into a large mixing bowl.
  3. Add drained corn, chopped stewed tomatoes, diced onion, and drained peas to the bowl.
  4. Mix until the mixture is evenly moist.
  5. Add the cut ham into the mixture and stir thoroughly.
  6. Stuff the mixture into the parboiled bell peppers.
  7. Place the stuffed peppers in a large glass baking dish, spoon excess stuffing around the peppers, and top each with one strip of bacon.
  8. Bake for 40 minutes until peppers are tender and bacon is crispy.
