Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • Cornbread, baked
  • Sliced or chopped chicken or turkey
  • Sage to taste
  • 2 or 3 hard-boiled eggs, chopped
  • 1 can cream of celery or chicken soup

Instructions

  1. Crumble the baked cornbread and mix with sage and pepper, tasting to adjust seasoning.
  2. Add enough broth to the mixture to make a moist stuffing.
  3. Layer half of the stuffing in a casserole dish.
  4. Add sliced or chopped chicken or turkey on top of the first layer.
  5. Add chopped hard-boiled eggs over the chicken.
  6. Mix sour cream and cream of celery or chicken soup, then pour over all the layers.
  7. Top with the remaining stuffing.
  8. Bake at 375°F (190°C) for 20 minutes or until lightly browned.
