Ingredients

  • 1 1/2 c. yellow cornmeal
  • 1/2 c. flour
  • 1/3 c. sugar (optional)
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/8 tsp. soda
  • 2 eggs
  • 1 c. buttermilk
  • 1/4 c. oil

Instructions

  1. Preheat oven to 400°.
  2. Mix all together until smooth.
  3. Heat a 9-inch iron skillet with oil and sprinkle cornmeal over the bottom (about 2 tablespoons cornmeal).
  4. When pan is hot, pour in the batter and bake in the oven until done, about 20 to 25 minutes.
