Ingredients

  • 6 medium potatoes, peeled and quartered
  • 3 medium onions, peeled and quartered
  • 1 cup thinly sliced carrots
  • 1 (3 to 4 lb.) corned beef brisket
  • 1 cup beer

Instructions

  1. In a crock-pot, place the potatoes, onions, and carrots.
  2. Trim excess fat from the corned beef brisket.
  3. Place the meat atop the vegetables in the crock-pot.
  4. Pour the beer over all the ingredients.
  5. Fill the crock-pot with water to cover the ingredients if necessary.
  6. Cover and cook on low heat for 9 to 11 hours.
  7. Slice the brisket thinly across the grain before serving.
  8. Serve the sliced beef with the cooked vegetables.
