Ingredients

  • 6 dressed catfish
  • 1/2 cup buttermilk
  • 1 1/2 cups cornmeal
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon pepper
  • oil

Instructions

  1. Place the dressed catfish in a plastic bag.
  2. Pour buttermilk over the fish in the bag and coat evenly.
  3. In a shallow dish, combine cornmeal, salt, baking powder, and pepper.
  4. Remove each fish from the buttermilk, then dredge in the cornmeal mixture to coat thoroughly.
  5. Heat oil in a frying pan over medium-high heat.
  6. Fry the coated fish in hot oil until golden brown and cooked through, about 5-7 minutes per side.
  7. Drain on paper towels and serve hot.
