Creamy, cheesy cornmeal squares with green chilies offer a savory, satisfying snack or side, perfect for gatherings or family meals with a delightful hint of spice.

Ingredients

  • 1 cup yellow cornmeal
  • 3/4 cup milk
  • 1/3 cup oil
  • 1 (8 oz.) can creamed corn
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 1 1/2 cups cheese (Cheddar and Jack)
  • 1 (4 oz.) can diced Ortega green chilies

Instructions

  1. Mix all the ingredients, except the cheese and chilies.
  2. Pour half of this mixture into an 11 3/4 x 7 1/2 x 1 3/4-inch Pyrex dish.
  3. Sprinkle 1 1/2 cups of cheese and the can of green chilies over the mixture.
  4. Pour the remaining mixture over the cheese and chilies.
  5. Bake at 350°F for about 40 minutes.
  6. Cut into squares and serve.
