Cornucopia Stuffing

Ingredients

  • 1 c. shredded carrot
  • 1 c. chopped celery
  • 1/2 c. chopped onion
  • 1/2 c. butter or margarine
  • 1 tsp. rubbed sage
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 8 c. dry bread crumbs
  • 2 c. finely chopped peeled apples
  • 1/2 c. chopped walnuts
  • 1/4 c. wheat germ

Instructions

  1. Saute carrot, celery and onion in butter until tender, but not brown.
  2. Stir in sage, salt, cinnamon and 1/8 teaspoon pepper.
  3. In a large bowl, combine bread cubes, chopped apple, walnuts and wheat germ.
  4. Add cooked vegetable mixture.
  5. Drizzle with enough broth to moisten.
  6. Stuff turkey as usual.
