Ingredients

  • 10 oz. frozen chopped broccoli, thawed and drained
  • 8.5 oz. corn muffin mix
  • 1/2 cup mayonnaise
  • 1/2 cup chopped onion
  • 1/2 cup cottage cheese
  • 4 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Mix all ingredients in a large bowl until well combined.
  2. Spoon the mixture into a lightly greased 9 x 5-inch loaf pan.
  3. Bake at 375°F (190°C) for 40 minutes or until golden brown and cooked through.
  4. Allow to cool slightly before slicing and serving.
