Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 cups flour
  • 4 cups peeled and diced fresh apples
  • 2 teaspoons vanilla
  • 1/2 cup sour cream

Instructions

  1. Cream shortening and sugar together.
  2. Add well-beaten eggs to the mixture.
  3. Sift dry ingredients (flour, cinnamon, salt, baking soda) together.
  4. Add dry ingredients alternately with sour cream to the creamed mixture.
  5. Add vanilla extract and mix well.
  6. Fold in peeled and diced apples by hand.
  7. Pour batter into a well-greased 13 x 9-inch pan.
  8. Bake at 350°F (175°C) for 40 to 50 minutes until golden and a toothpick inserted in the center comes out clean.
