Ingredients

  • 1/4 cup chopped sweet red pepper
  • 1/4 cup chopped onion
  • 2 tablespoons finely chopped jalapeno peppers
  • 3 garlic cloves, minced
  • 1 tablespoon olive or vegetable oil
  • 2 cups cooked rice
  • 1 cup frozen corn
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 green onions, chopped

Instructions

  1. In a large skillet, sauté red pepper, onion, jalapeno, and garlic in oil until tender.
  2. Add cooked rice, corn, salt, and pepper to the skillet.
  3. Cook and stir until the mixture is heated through.
  4. Sprinkle with chopped green onions before serving.
