Cottage Cheese Cake

- Preheat oven to 250°F (120°C).
- Mix graham cracker crumbs and sugar together well.
- Add melted butter and mix well.
- Press the mixture onto the bottom of an 8 or 9-inch spring-form pan and pack down firmly.
- Mix cottage cheese, sifted flour, sour cream, eggs, sugar, and salt; beat well until smooth.
- Add lemon juice and vanilla; beat well.
- Pour the cheese mixture into the prepared spring-form pan.
- Bake for 1 hour or until a cake tester comes out clean.
- Turn off the oven and leave the cake inside with the door closed for 1 hour.
- Allow the cake to cool before removing the side of the pan.
