Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter or margarine
  • 2 cups cottage cheese (fine curd)
  • 1/4 cup sifted flour
  • 1 cup sour cream
  • 4 eggs
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice

Instructions

  1. Preheat oven to 250°F (120°C).
  2. Mix graham cracker crumbs and sugar together well.
  3. Add melted butter and mix well.
  4. Press the mixture onto the bottom of an 8 or 9-inch spring-form pan and pack down firmly.
  5. Mix cottage cheese, sifted flour, sour cream, eggs, sugar, and salt; beat well until smooth.
  6. Add lemon juice and vanilla; beat well.
  7. Pour the cheese mixture into the prepared spring-form pan.
  8. Bake for 1 hour or until a cake tester comes out clean.
  9. Turn off the oven and leave the cake inside with the door closed for 1 hour.
  10. Allow the cake to cool before removing the side of the pan.
