Ingredients

  • 1 3/4 cups flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon soda
  • 1/2 cup cornflakes
  • 1 egg
  • 1 cup cottage cheese
  • 2 1/3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 cup quick oats
  • 4 tablespoons melted fat

Instructions

  1. Sift the flour, salt, soda, and baking powder into a bowl and mix in the oats and cornflakes.
  2. Beat the egg yolk; add melted fat, cottage cheese, and milk.
  3. Pour the liquid mixture into a well in the dry ingredients and beat until combined.
  4. Fold in the beaten egg whites gently.
  5. Bake in muffin tins in a slow oven at 300°F (150°C) for about 1 hour.
