Ingredients

  • 2 large baking potatoes
  • 1 can (15-oz) chili without beans
  • 1/4 cup chopped green onions
  • 1 jar (4-oz) sliced mushrooms, drained
  • 1 cup cubed fully cooked ham
  • 1 cup shredded cheddar cheese

Instructions

  1. Cut each baked potato in half lengthwise, leaving the bottom attached.
  2. Push the potatoes open and fluff the pulp with a fork.
  3. Place the potatoes on a microwave-safe plate.
  4. Top each potato with chili, chopped green onions, drained sliced mushrooms, cubed ham, and shredded cheddar cheese.
  5. Cover and microwave on high for 3 minutes or until the cheese is melted.
  6. Optional: Top with sour cream before serving.
