Ingredients

  • 1 cup sugar
  • 1 1/2 tablespoon shortening
  • 1 egg
  • 2 1/4 cups flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 pound raisins
  • 1 3/4 to 2 cups water

Instructions

  1. Mix together sugar and shortening. Add egg, flour, salt, and baking soda.
  2. Boil raisins in water for 5 minutes.
  3. Let the raisin-water mixture cool slightly.
  4. Add raisins and water (once cooled) to the rest of the ingredients and mix well.
  5. Pour the batter into a greased loaf pan.
  6. Bake at 350°F (175°C) for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
