Ingredients

  • 1 lemon
  • 1 lb tart apples (2 to 3), peeled, cored and thinly sliced
  • 1/2 cup sugar
  • 2 teaspoons sugar (reserved for crust)
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 refrigerated pie crust

Instructions

  1. Preheat the oven to 450°F.
  2. Grate 1 teaspoon of lemon peel and squeeze 2 teaspoons of lemon juice.
  3. Set aside.
  4. Toss the sliced apples with sugar, flour, cinnamon, lemon peel, and lemon juice.
  5. Place the pie crust on a rimless baking sheet lightly dusted with flour.
  6. Dust a rolling pin with flour and roll the pastry to a rough 13-inch circle.
  7. Heap the apple mixture on the pastry, leaving a 2-inch border around the edges.
  8. Scatter the butter on top of the fruit.
  9. Fold the pastry border back over the apples to create an uneven rustic edge of about 1 1/2 inches, leaving the center exposed.
  10. Sprinkle the reserved sugar over the pastry border.
  11. Bake for 12 minutes, then reduce the oven temperature to 425°F and continue baking until the apples are softened and bubbly, and the pastry is golden brown, about 12 to 15 minutes.
  12. Serve warm.
