Ingredients

  • 1 loaf (6 to 8 cups) stale French bread
  • 4 cups milk
  • 6 tablespoons Equal or NutraSweet, or to taste
  • 3/4 cup egg substitute
  • 2 tablespoons vanilla
  • 1 cup raisins
  • 1/4 cup chopped pecans (optional)
  • 4 tablespoons reduced calorie margarine, melted
  • 1/2 teaspoon cinnamon

Instructions

  1. Combine all ingredients; mix just until bread is moistened.
  2. Pour the mixture into a 9 x 13-inch pan sprayed with non-stick spray.
  3. Place in a nonpreheated oven.
  4. Bake at 375°F (190°C) for 1 hour and 15 minutes.
  5. Serve alone or with fat-free ice cream or frozen yogurt.
