Ingredients

  • 1 cup yellow cornmeal

  • 1 egg
  • 8.5 oz. can cream-style corn
  • 8 oz. carton commercial sour cream
  • 2 tablespoons vegetable oil

Instructions

  1. Combine the cornmeal, all-purpose flour, baking powder, salt, sugar (if using), and baking soda in a large bowl; make a well in the center of the mixture.
  2. In a separate bowl, whisk together the egg, cream-style corn, sour cream, and vegetable oil.
  3. Add the wet ingredients to the dry ingredients, stirring just until moistened.
  4. Spoon the batter into greased muffin pans.
  5. Bake at 400°F (200°C) for 12 to 15 minutes or until golden brown.
