Tips & Substitutions

For a richer flavor, consider using leftover mashed potatoes instead of fresh, or add some shredded cheese to the filling. If you don't have bacon grease, butter or olive oil can be suitable substitutes. You can also experiment with different meats like shredded chicken or turkey for a unique twist. Make sure to let the filling cool completely before assembling to prevent the dough from getting soggy.

Serving Suggestions

These Country Cornish Pastries are great served alongside a fresh salad or some steamed vegetables for a balanced meal. You might also enjoy them with a tangy dipping sauce or mustard. They make for a hearty snack or lunch option, and are perfect for picnics or packed lunches. For a complete meal, consider pairing them with a side of Beef Stroganoff(From Betty Crocker).

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the pastries in a preheated oven at 350°F (175°C) for about 15-20 minutes, or until heated through. This will help maintain the crispiness of the crust, unlike microwaving which can make it soggy.

Frequently Asked Questions

Can I use a different type of meat in the filling?

Absolutely! While corned beef is traditional, you can substitute it with cooked chicken, turkey, or even a vegetarian meat alternative. Just ensure that any meat you use is fully cooked before adding it to the potato mixture.

How do I prevent the pastry from becoming soggy?

To keep the pastry crispy, ensure your filling is not too wet—drain any excess liquid after cooking the potatoes. Allow the filling to cool completely before filling the pastry, and make sure to seal the edges well to prevent moisture from escaping during baking.

Can I freeze the pastries for later use?

Yes, you can freeze these pastries! After baking, let them cool completely, then wrap each pastry tightly in plastic wrap and place them in a freezer bag. They can be frozen for up to 2 months. To reheat, bake from frozen at 350°F (175°C) until heated through.
