Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 3 cups soft bread crumbs
  • 1 egg
  • 1/2 cup minced onion
  • 3/4 cup milk
  • 2 teaspoons salt
  • 1 1/4 teaspoons ginger
  • 2 cups peeled apples, chopped
  • 1 1/2 cups mashed potatoes
  • 1 (10 oz.) package frozen chopped broccoli, cooked and drained
  • 1/2 cup grated Cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blend ground beef and pork in a bowl.
  3. Add bread crumbs, egg, minced onion, milk, salt, and ginger; mix to blend.
  4. Stir in chopped apples.
  5. Shape mixture into a loaf on a jelly roll pan.
  6. Bake in the preheated oven for 45 minutes.
  7. Drain off excess fat.
  8. Combine mashed potatoes and cooked, drained broccoli; spread over the loaf as a topping.
  9. Sprinkle grated Cheddar cheese on top.
  10. Bake for an additional 15 minutes.
  11. Let stand about 5 minutes before removing to a warmed platter.
