Irish Meat Loaf
A hearty Irish-inspired meat loaf combining beef, pork, and apples, topped with mashed potatoes and cheese, perfect for comforting family meals and gatherings.
Ingredients
- 1 1/2 lb. ground beef ⓘ
- 1/2 lb. ground pork ⓘ
- 3 cups soft bread crumbs ⓘ
- 1 egg ⓘ
- 1/2 cup minced onion ⓘ
- 3/4 cup milk ⓘ
- 2 teaspoons salt ⓘ
- 1 1/4 teaspoons ginger ⓘ
- 2 cups peeled apples, chopped ⓘ
- 1 1/2 cups mashed potatoes ⓘ
- 1 (10 oz.) package frozen chopped broccoli, cooked and drained ⓘ
- 1/2 cup grated Cheddar cheese ⓘ
Instructions
- Preheat oven to 350°F (175°C).
- Blend ground beef and pork in a bowl.
- Add bread crumbs, egg, minced onion, milk, salt, and ginger; mix to blend.
- Stir in chopped apples.
- Shape mixture into a loaf on a jelly roll pan.
- Bake in the preheated oven for 45 minutes.
- Drain off excess fat.
- Combine mashed potatoes and cooked, drained broccoli; spread over the loaf as a topping.
- Sprinkle grated Cheddar cheese on top.
- Bake for an additional 15 minutes.
- Let stand about 5 minutes before removing to a warmed platter.
