Ingredients

  • 15 1/2 oz. can tamales
  • 1 can whole kernel corn
  • 1 1/2 lbs. ground beef
  • 1 onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1 can tomato paste
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • Dash garlic salt
  • 2 small bay leaves
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Drain the tamales and reserve the liquid.
  2. Mash the tamales and combine with the drained corn.
  3. Sauté ground beef, finely chopped onion, and chopped celery until the meat is crumbly.
  4. Stir in the tomato paste.
  5. Add enough water to the reserved tamale liquid to make 2/3 cup and pour into the mixture, seasoning with salt, pepper, and garlic salt.
  6. In a greased 1 1/2-quart casserole, arrange alternate layers of the tomato and corn mixture and the meat mixture.
  7. Optionally, add pitted black olives on top.
  8. Insert the tips of bay leaves into each end of the casserole.
  9. Sprinkle grated Parmesan cheese over the top.
  10. Bake in a moderate 350°F oven for 30 minutes.
  11. Remove bay leaves before serving.
