Delicious Cajun stuffed fish features tender fillets filled with a flavorful crab and vegetable mixture, seasoned with Cajun spices, perfect for a savory seafood main course.

Ingredients

  • 8 oz. crab meat
  • 8 to 10 fish fillets (sea trout, pike, catfish, or orange roughy)
  • 1 cup finely chopped celery
  • 1/2 cup finely chopped onion
  • 1 Tbsp. minced garlic
  • 1 stick butter
  • 1 1/2 cups Progresso Italian style bread crumbs
  • Paul Pondhammers Cajun Magic seasoning

Instructions

  1. In a skillet, melt the butter and add the chopped onions, celery, and minced garlic.
  2. Simmer until the vegetables are tender.
  3. Meanwhile, prepare the fish fillets by making a lengthwise slit to create a pouch without cutting through the fillet.
  4. If using small fillets, overlap pieces and secure with toothpicks.
  5. Once the vegetables are tender, add the bread crumbs and crab meat, mixing well. Adjust with more bread crumbs or butter if needed to form a workable stuffing.
  6. Place a heaping spoonful of stuffing into each fillet and mold with your hands.
  7. Arrange the stuffed fillets on a lightly greased baking dish.
  8. Sprinkle Cajun seasoning over the stuffed fillets.
  9. Bake at 350°F (175°C) for 18 to 20 minutes until cooked through and golden.
