- Simmer until the vegetables are tender.
- Meanwhile, prepare the fish fillets by making a lengthwise slit to create a pouch without cutting through the fillet.
- If using small fillets, overlap pieces and secure with toothpicks.
- Once the vegetables are tender, add the bread crumbs and crab meat, mixing well. Adjust with more bread crumbs or butter if needed to form a workable stuffing.
- Place a heaping spoonful of stuffing into each fillet and mold with your hands.
- Arrange the stuffed fillets on a lightly greased baking dish.
- Sprinkle Cajun seasoning over the stuffed fillets.
- Bake at 350°F (175°C) for 18 to 20 minutes until cooked through and golden.
