Crab-Topped Potatoes

Ingredients

  • 2 each baking potatoes
  • 1 each small onion, chopped
  • 1/4 c. shredded crab meat
  • 1/4 c. chopped pecan halves
  • 2 Tbsp. thinly sliced green onions, including tops
  • 2 Tbsp. thinly sliced celery
  • 1 tsp. lemon juice
  • 1/4 c. plain nonfat yogurt

Instructions

  1. Microwave potatoes on High power for 12 minutes or cook potatoes in oven at 350° until soft.
  2. (Potatoes will bake in a hurry if they are boiled in salted water for about 10 minutes before popping into a very hot oven.)
