Ingredients

  • 2 c. crabmeat
  • 1/2 Tbsp. pimiento, chopped
  • 1/2 Tbsp. green peppers, chopped
  • 1 Tbsp. butter
  • 4 Tbsp. butter
  • 5 Tbsp. all-purpose flour
  • 1 c. milk
  • 1/2 tsp. salt
  • 1 egg yolk
  • 1/4 tsp. dry mustard
  • 1 tsp. Worcestershire sauce
  • 3/4 cup mayonnaise

Instructions

  1. Preheat oven to 375°F for 10 minutes.
  2. Saute chopped pimiento and green peppers in butter until tender.
  3. Make a heavy cream sauce by melting butter in a heavy skillet over medium heat; stir in flour, milk, and salt. Continue stirring until mixture is smooth and thick.
  4. Combine the sautéed vegetables, cream sauce, and other ingredients except crab, mayonnaise, and paprika.
  5. Mix in 3/4 cup mayonnaise.
  6. Gently fold in crabmeat to avoid breaking up lumps.
  7. Transfer mixture to a baking dish and bake at 375°F for about 15 minutes or until heated through and bubbly.
