Cracked Wheat Pilaf

Ingredients

  • 1 cup large grain cracked wheat
  • 5 tablespoons butter
  • 1 large onion
  • 1 tablespoon tomato sauce or 1 small tomato
  • 1 1/2 cups beef or chicken broth
  • salt and pepper

Instructions

  1. Wash the cracked wheat with cold water, drain, and set aside.
  2. In a heavy saucepan, melt 2 tablespoons of butter over medium heat and add the chopped onion, sautéing until golden brown.
  3. Stir in the tomato sauce or chopped tomato and cook for another 5 minutes.
  4. Add the broth, remaining butter, salt, and pepper, then bring to a boil.
  5. Add the cracked wheat, stir once, cover, and boil on high for 5 minutes.
  6. Reduce heat to low and cook until the cracked wheat absorbs all the broth, about 25 minutes.
  7. Remove from heat, take off the cover, and place a napkin over the pan.
  8. Replace the cover and leave in a warm place for 40 minutes to steam.
  9. The pilaf should be flaky and ready to serve.
