Ingredients

  • fresh ground pepper
  • sugar
  • long narrow eggplants
  • nutmeg
  • egg
  • extra virgin olive oil
  • cinnamon
  • onion
  • very lean ground beef
  • water
  • parmesan
  • milk
  • tomato sauce
  • butter
  • salt

Instructions

  1. Slice the eggplants lengthwise into thin strips and set aside.
  2. Chop onions, green onions, and celery; sauté in olive oil until softened.
  3. Add very lean ground beef to the sautéed vegetables and cook until browned.
  4. Stir in tomato sauce, season with salt, pepper, cinnamon, and nutmeg; simmer for 20 minutes.
  5. Prepare the béchamel sauce by melting butter, adding milk, grated Parmesan, and a beaten egg; cook until thickened.
  6. Layer eggplant slices in a baking dish, then spread the beef mixture over, and repeat layers as needed.
  7. Pour the béchamel sauce over the assembled layers.
  8. Bake in a preheated oven at 180°C (350°F) for approximately 1 hour until golden and bubbly.
