- Slice the eggplants lengthwise into thin strips and set aside.
- Chop onions, green onions, and celery; sauté in olive oil until softened.
- Add very lean ground beef to the sautéed vegetables and cook until browned.
- Stir in tomato sauce, season with salt, pepper, cinnamon, and nutmeg; simmer for 20 minutes.
- Prepare the béchamel sauce by melting butter, adding milk, grated Parmesan, and a beaten egg; cook until thickened.
- Layer eggplant slices in a baking dish, then spread the beef mixture over, and repeat layers as needed.
- Pour the béchamel sauce over the assembled layers.
- Bake in a preheated oven at 180°C (350°F) for approximately 1 hour until golden and bubbly.
