Delightful stuffed zucchini filled with seasoned ground beef, herbs, and Parmesan cheese, ideal for a flavorful and healthy main or side dish perfect for a cozy family meal.

Ingredients

  • 2 zucchini
  • 1/4 lb lean ground beef
  • 1 Tbsp dry bread crumbs
  • 1 tsp catsup
  • 1/2 tsp Worcestershire sauce
  • 1 Tbsp instant minced onion
  • 1 Tbsp chopped parsley
  • 1 tsp celery salt
  • 1 tsp oregano
  • dash garlic powder
  • dash pepper

Instructions

  1. Wash zucchini; cut off ends and halve lengthwise.
  2. Drop into a pot of boiling water and cook until slightly tender.
  3. Plunge zucchini into cold water, allow to cool, then drain.
  4. Scoop out pulp with a spoon, leaving the shell about 1/4-inch thick.
  5. Drain shells on paper towels.
  6. In a bowl, combine ground beef, bread crumbs, catsup, Worcestershire sauce, minced onion, chopped parsley, celery salt, oregano, garlic powder, pepper, beaten egg, and Parmesan cheese.
  7. Stuff the zucchini shells with the beef mixture.
  8. Place stuffed zucchini in a baking dish and bake at 375°F (190°C) for about 15 minutes or until cooked through and browned.
