Cran-Apple Chops

Ingredients

  • cooking oil spray
  • 6 boneless chops (3/4-inch thick)
  • 1/2 c. apple juice
  • 1/2 c. cranberry sauce
  • 2 Tbsp. brown sugar
  • 2 Tbsp. orange juice
  • 1/4 tsp. ginger
  • 1/8 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Coat a skillet with cooking spray.
  2. Heat over medium heat. Sprinkle pork chops with black pepper and salt. Put chops in the skillet and brown on each side.
  3. Add apple juice or cider.
  4. Cover tightly; cook on low 5 or 6 minutes.
  5. In a small bowl, combine cranberry sauce, brown sugar or honey, orange juice, ginger and nutmeg.
  6. Pour over the chops.
  7. Cook for 2 or 3 minutes or until heated through.
  8. Makes 6 servings.
