Cranberry Appetizer Spread

A vibrant, sweet-tart cranberry spread with apricot and almond accents, perfect as a festive appetizer served over cream cheese with crackers for a delightful holiday starter.

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 12 oz. cranberries
  • 1/2 cup apricot preserves
  • 2 Tbsp. lemon juice
  • 1/3 cup slivered almonds, toasted
  • 1 pkg. (8 oz.) cream cheese
  • assorted crackers

Instructions

  1. In a saucepan over medium heat, bring water and sugar to a boil without stirring, and boil for 5 minutes.
  2. Add cranberries; cook until berries pop and sauce thickens about 10 minutes.
  3. Remove from heat.
  4. Cut apricot preserves into small pieces and add to the cranberry mixture.
  5. Stir in lemon juice.
  6. Let the mixture cool.
  7. Add toasted slivered almonds to the cranberry mixture.
  8. Spoon the cranberry spread over cream cheese and serve with assorted crackers.
